Aanal Kotak Brings The Secret Kitchen to the United States with Schaumburg, Illinois Opening

Celebrity chef and restaurateur Aanal Kotak has opened The Secret Kitchen in Schaumburg, Illinois, marking the brand’s debut in the United States and its most significant international move to date as Indian fine dining continues its rapid global expansion.

The restaurant, located at 1411 West Schaumburg Road in the Chicago suburb, opened on 19 April 2026 and operates on a dinner-only basis, seven days a week, from 5:30 PM to 10:30 PM. A lunch service is planned for the future. The Schaumburg location becomes the latest addition to a portfolio that spans multiple cities in Gujarat, including Vadodara, Ahmedabad, Rajkot and Patan, as well as outlets in Australia and Vaughan, Ontario in Canada.

The brand and its origins

The Secret Kitchen is built on a specific culinary premise: a contemporary reinterpretation of India’s royal kitchen traditions, elevated through modern technique and handcrafted spice blends. The blends are produced in a dedicated facility that gives the brand its name, then distributed across all outlets, providing a consistent flavour identity regardless of location.

Kotak, who previously served as a special judge on MasterChef India, has described the brand as ‘a bridge between modern Indian cuisine and our age-old food traditions, focusing on the overall fine-dine experience.’ The Schaumburg menu reflects that approach, combining classics such as Butter Chicken and Nawabi Lamb Chops with inventive plates including Avocado Dahi Puri, and a meaningful selection of plant-based options for the evolving preferences of the American diner.

The dining space pairs rich Indian design influences with a bold, contemporary aesthetic, positioning the restaurant as an experiential destination rather than a conventional curry house.

Speaking at the launch, Kotak said: ‘The Secret Kitchen has always been deeply personal to me. It’s inspired by the royal Indian kitchens I grew up hearing about, where food was not just cooked but celebrated. Bringing this concept to Chicago is a significant moment, not just for the brand but for how Indian cuisine is experienced globally. I wanted to create a space where tradition meets innovation, where every dish carries the depth of its origin but is presented in a way that resonates with today’s diner.’

A calculated international expansion

The US opening follows a deliberate, stage-by-stage internationalisation of the brand. The Canada launch in Vaughan, Ontario, with local partner Jyot Thakkar, served as an early test of the model outside India. The Schaumburg location extends that playbook into the United States, where the Indian-American diaspora is substantial and the appetite for contemporary Indian dining has grown significantly.

Schaumburg’s positioning is strategic. The suburb sits at the heart of Chicago’s northwest corridor, home to a sizable South Asian community and a well-established dining culture. It offers market validation with lower operational complexity than a city-centre debut in Chicago proper.

Beyond the restaurant business, Kotak has built a diversified culinary ecosystem that includes the FMCG spice brand TSK, the quick-service concept Sandoitchi, and ventures SouthAk and The Baking Couture. The US restaurant expansion is the flagship of this broader international push.

The moment Indian dining is having in America

The timing of The Secret Kitchen’s US arrival is not incidental. American dining has undergone a significant reorientation toward Indian cuisine in recent years. Semma, the New York restaurant specialising in Tamil Nadu cuisine, topped the New York Times’ best restaurants list in 2025, reflecting the mainstreaming of regional Indian cooking beyond the long-dominant North Indian repertoire.

The Indian Restaurant Association of America identified hyper-regional Indian flavours as a leading trend for 2025 and 2026, as American diners grow increasingly curious about the breadth of the subcontinent’s culinary traditions. Generational shifts are a significant driver: younger diners, particularly millennials and Generation Z, are seeking bold, authentic flavour profiles that older iterations of Indian restaurant dining in the US rarely delivered.

What distinguishes the current wave of Indian restaurant openings is the emphasis on storytelling and craft. Operators are competing not just on food quality but on the architecture of the guest experience: the narrative behind the dishes, the provenance of ingredients, and the visual and spatial identity of the room. The Secret Kitchen’s emphasis on royal kitchen heritage, custom spice production and immersive design places it squarely within that movement.
