Guy Freedman has been promoted to group hotel operations director at THE PIG, expanding his responsibilities from running the original Brockenhurst hotel to supporting operations across the portfolio.

According to Boutique Hotelier’s appointment report, published on 15 October, he will work with individual hotel directors and group support teams, helping maintain standards while retaining the character of each property. Coaching existing leaders and supporting incoming hotel directors as the business grows will form part of the remit.

From the restaurant floor to group operations

Freedman’s career within the business stretches back to 2014, when he joined as restaurant manager. THE PIG’s recent account of its first 15 years records three years as deputy hotel director before he took charge of THE PIG-at Bridge Place for its opening.

He opened the Kent property as hotel director in 2019 and returned to Brockenhurst in 2023. Recruitment is now under way for his successor at the New Forest hotel. Freedman has also highlighted that opportunity on his own LinkedIn page, describing the chance to lead the team at the group’s original property.

“Every Pig has its own magic, and that comes from our people, not from me,” he told Boutique Hotelier.

The progression gives him experience of both an established operation and the work of bringing a new hotel and team together. Those are relevant foundations for a role that now requires him to support other leaders across several locations.

A distinctive portfolio preparing to grow

THE PIG began in Brockenhurst in 2011 and now lists nine hotels, from its Southampton property, THE PIG-in the wall, to country-house hotels in destinations including Kent, Cornwall and the Cotswolds. Its restaurants-with-rooms approach puts kitchen gardens and locally sourced food at the centre of the guest experience.

The next addition, THE PIG-on the farm, is planned for late summer 2027 on the Walton Estate in Warwickshire, around five miles from Stratford-upon-Avon. The company’s current plans provide for 35 bedrooms on a 53-acre site, alongside its largest restaurant and restaurant terrace.

The group has also announced a future property at the existing Tunbridge Wells Hotel on The Pantiles. That project follows the decision not to proceed with its earlier Groombridge Place plans. The company has not set out a firm opening date for Tunbridge Wells.

Developing leaders across individual hotels

For a business built around properties with their own personalities, a group operations role carries a practical balancing act. Shared expectations need to translate into reliable service, while local teams retain the judgement and knowledge that make their hotels distinctive.

Freedman’s appointment brings that responsibility together with leadership development. His internal progression offers a visible example of the route from restaurant management into property and group-level responsibility, while the Brockenhurst vacancy creates another leadership opportunity within the portfolio.

As the estate expands, the measure of the new remit will be how effectively its hotel directors are supported: maintaining day-to-day standards, building confident teams and preparing new operations without diluting the character guests associate with each PIG.
